Components:
1 white onion, diced
2 cubanelle peppers, diced
4-5 cloves garlic, minced
2 oz can tomato paste
2-15 oz cans black beans (don’t drain!)
1 teaspoon oregano

2 bay leaves
2 tablespoons pink wine vinegar
salt
freshly floor black pepper
2 1/2 cups cooked white rice
Instructions:
In a big pot sauté onion, cubanelle peppers and garlic in oil till translucent. Add the entire remaining components besides the rice and simmer till warmed by means of, stirring sometimes. Stir within the cooked white rice till nicely coated. Simmer 5 extra minutes previous to serving.
My ideas:
Yearly we do a unique themed Thanksgiving. One yr it was Hawaiian, one yr it was Polish, and even Maryland themed. This yr we a Cuban theme so after all we needed to make Moros y Cristianos (Cuban-style Rice and Beans)! We made the recipe a bit of simpler by mixing the white rice cooked into the bean combination vs cooking the rice in with the beans.
