Elements:
1 avocado, halved
1 bunch carrot greens
1/4 cup avocado oil
1/2 cup recent squeezed grapefruit juice
1/4 cup water
2 cloves garlic
salt
freshly floor black pepper
Instructions:
Place all substances in a blender, pulse till clean.
My ideas:
I had some carrots with lovely tops and I didn’t need them to go to waste so I reworked them into this straightforward dressing. The avocado added a ton of creaminess and the grapefruit juice (some pulp made it in too) gave it a beautiful tang. Excellent for a salad or over steamed greens.
